Country Carrot Bread Recipe (Blender Style) |

| Oil | 1½ cups. |
| Sugar | 2 cups. (regular) |
| Eggs | 3 large. |
| Flour | 3 cups. |
| Baking Soda | 2 tsp. |
| Cinnamon | 1 tsp. |
| Salt | ½ tsp. |
| Grated Carrots | 2 cups grated or chunks (can be used in blender) |
| Orange Rind | 2 tbs. grated. |
| Vanilla | 2 tsp. |
| Pineapple | 1 small can, crushed. |
| Nuts | 1½ cups. |
| Place oil and carrot chunks into blender, blend
and keep adding chunks until you have blended 3 1/2 cups worth of mixture.
Add pineapple, orange rind, eggs, vanilla and nuts, and blend only until
nuts are coarsely chopped. Pour into flour and dry ingredients and mix
well. Pour into 2 bread pans. Bake at 350 for 1 hour. Really makes your house smell great and taste buds begging all day long!!!!! |
